Spinach and Bacon Soup...


Here is a recipe I made up after tasting this amazing soup when we lived in Tassie. We were on one of our little country drives, exploring new places and found this little coffee shop up in a mountain. It was the 'soup of the day'. Very yummy...

Mel's Spinach and Bacon Soup

Ingredients:

1 - 2 bunches SPINACH, roughly chopped up
60g BUTTER
I ONION, sliced
2 Tlbs PLAIN FLOUR
2 1/2 cups CHICKEN STOCK
1 1/2 cups MILK
1/4 teas GROUND NUTMEG
SALT & PEPPER to taste
4 BACON RASHERS, roughly chopped up

Method:

Cook bacon in pan then remove.
Heat butter and add onion, cook till soft.
Add spinach leaves and cook until wilted.
Add flour and stir over heat until spinach lightly coated.
Remove mixture from heat, stir in stock and return to heat.
Stir until boils and thickens a bit.
Add milk, nutmeg and salt and pepper.
Cover and simmer for 15 - 20 minutes. (Mmmm... i don't always do this if I'm hungry)
Cool slightly and add in bacon.
Blend in blender or use stick blender in saucepan.
Heat again if needed.
Serve with croutons or sourdough.
