Jack's trip to the barber...

It's getting quite long at the back. He asked for a haircut that doesn't bounce when he's on the trampoline...

I thought it might be a bit longer on top but it looks really cute and Jack is so much cooler in this hot weather... And when he jumps on the trampoline, it doesn't bounce in his eyes anymore...

This gorgeous old jug only cost me 10 cents. Yep, 10 cents. I found it at a lifeline shop in Toowoomba. It's going to be my new gravy jug for the yummy homemade gravy that Laura makes us....

We had a great day at Auntie Jill's house with Dan coming too. Laughed playing board games, drank coffees and ginger ale... I took sketch paper and we all did a self portrait... Lots of fun.

Ran into Ikea to grab a present in the frame section. I forgot it was Saturday. Oh my.... Laura and I snuck in through the checkouts and had to swim upstream against the current of shoppers flowing towards us with overloaded trolleys and screaming kids....

Spinach and Bacon Soup...
Here is a recipe I made up after tasting this amazing soup when we lived in Tassie. We were on one of our little country drives, exploring new places and found this little coffee shop up in a mountain. It was the 'soup of the day'. Very yummy...
Mel's Spinach and Bacon SoupIngredients:
1 - 2 bunches SPINACH, roughly chopped up
60g BUTTER
I ONION, sliced
2 Tlbs PLAIN FLOUR
2 1/2 cups CHICKEN STOCK
1 1/2 cups MILK
1/4 teas GROUND NUTMEG
SALT & PEPPER to taste
4 BACON RASHERS, roughly chopped up
Method:
Cook bacon in pan then remove.
Heat butter and add onion, cook till soft.
Add spinach leaves and cook until wilted.
Add flour and stir over heat until spinach lightly coated.
Remove mixture from heat, stir in stock and return to heat.
Stir until boils and thickens a bit.
Add milk, nutmeg and salt and pepper.
Cover and simmer for 15 - 20 minutes. (Mmmm... i don't always do this if I'm hungry)
Cool slightly and add in bacon.
Blend in blender or use stick blender in saucepan.
Heat again if needed.
Serve with croutons or sourdough.
